Banh da cua (or crab flavored rice vermicelli) is a typical Hai Phong noodle, brown-red in color, larger than the bún or hu tieu.
The color comes from a natural ingredient - the Heaven Leak (or gấc). This fruit has no taste, but it is very rich in beta-carotene, hence the bright color that banh da cua takes.
